Mexican Wedding Cookie Recipe
Mexican Wedding Cakes are delightful round cookies dusted with a melt-in-your-mouth coating of sugar. Even if you aren't planning a Mexican-themed wedding, you will still adore serving these delicious treats to your wedding guests!
They look especially elegant served in a wide open champagne glass at every place setting.
These buttery little cakes contain finely chopped nuts and are rolled in powdered sugar. They take about an hour to prepare. This recipe makes approximately 4 dozen cookies.
1 cup softened butter or margarine
1/2 cup powdered sugar
1 teaspoon vanilla (use real vanilla - not imitation!)
2 1/4 cups regular flour (not self-rising)
3/4 cup finely chopped nuts (pecans are especially yummy!)
1/4 teaspoon salt
Powdered sugar for rolling - a small amount of cinnamon can be added if desired.
Heat oven to 400ºF. In a large bowl, mix the butter, 1/2 cup powdered sugar and the vanilla. Stir in flour, salt and nuts until dough holds a shape when squeezed lightly.
Form dough into 1-inch balls. Place them about 1 inch apart on ungreased cookie sheet. Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.
Roll warm cookies in powdered sugar; set to cool on a wire rack. Roll in powdered sugar one more time.
