Ribbon cake

by Diane
(NY)

I am making a wedding cake in June. The bride would like fabric ribbon around the bottom of all the round layers. How do I attach the ribbon? I am also concerned that if the ribbon is put on too soon, it will soak up the crisco & change color. Thanks!

the Florist

OK . . . I'm really the florist - but my expert cake decorating colleagues tell me that you should either use a "crusting buttercream" (dryer than regular buttercream, rather like a "faux fondant" but tastes better).

Here's a recipe.

Faux Fondant

Speaking as a florist - I would recommend that if you don't want to change your icing to choose a waterproof ribbon. (Most sheer ribbons made of nylon lets moisture bubble right off). Satin ribbon would be your worst culprit. Try a small sample by smearing shortning on it and seeing if the color changes.

Also - you can attach the ribbons to a toothpick using colored corsage tape. Insert the toothpick - but not the ribbon.

This is a point where you make strong recommendations to your bride about using products that work and give the best display. Brides usually have no problems going along with my recommendations when they know the reason behind it.
