Buttercream Icing Recipe

Best Cake Decorating Frosting
from Wilton Cakes!

This Buttercream Icing Recipe is the best for decorating wedding cakes. Straight from the kitchens of Wilton Cakes, this icing is best for covering cake tiers. Borders will hold their shape as well as cake-top piped flowers. Use a heavy mixer - hand mixers may struggle a bit with this heavy frosting.

Your results will yield a snow-white icing that tastes good and stays soft and creamy.

2/3 cup water

4 tablespoons powdered meringue

1 1/4 cups solid white shortening (use a good brand)

11 1/2 cups confectioners' sugar, sifted

3/4 teaspoon salt

1/4 teaspoon butter flavoring

1/2 teaspoon almond flavoring

1/2 teaspoon clear vanilla flavoring

Combine water and meringue powder in large mixer bowl and whip at high speeds until peaks form. Add four cups sugar, one cup at a time, beating after each addition at low speed.
Alternately add shortening and remainder of sugar. Add salt and flavorings and beat at low speed until smooth. May be stored, well covered, in refrigerator for several weeks. Bring to room temperature to re-beat.
Yield: eight cups. Recipe may be cut in half or doubled.

Chocolate Icing Recipe

Mmmmm . . . chocolate buttercream! Using the above recipe, blend in a mixture of one cup of cocoa and four tablespoons of water (before adding shortening.)

Icing for Decorating with Flowers

The very best for piping flowers would not be suitable for frosting the cake tiers. Go to Royal Icing Recipe to see the Wilton Cakes recipe for it.
